I've seen limelights here as bonsai. I know ZERO about bonsai but bought two limelights recently and realized they won't work here in the Georgia mountains with the deer. Thought about bonsai. Any recommendations?? Likely I need some serious instruction so feel free to let me know.

Hello.
First recommendation is to study first what are the local and begginer-friendly species you have at your disposal...
Species that are not a challenge on your environment, nor difficult to achieve proportion (big leafed or without much thickening potential), and that can overcome your begginer mistakes...
One of the most common begginer mistake is to choose the wrong species...

Very nice Frank! I never heard about the species, and wow, that post is 11 years old, I wonder how is it doing...
