I would not do anything to it, it needs to grow first. It is very young plant, with not a lot of foliage. At this time of year it needs to be accumulating nutrients for the winter and next spring. Leave it in a fairly sheltered spot where it still gets cold and think about pruning next year.

Back to the question.
What to cut off and what to bend are artistic questions, and that depends mostly on you, the artist.
Of course, your question meant you need ideas, but it is really hard for me to put your idea in your head.
You can't do any cutting or bending until spring, so spend several months looking at pictures in the gallery here. Ask yourself, do I want my tree to look like that one? Can I? What branch cones off and what bends?
Read in the website how to here how to bend and cut.
Then get another tree and do it all again.
