help please with creating foliage

Hi all, hope someone can help me. I've read a lot and have an idea of what I've to try and create like Harry explains in this photo but as mine is a needle juniper Im struggling to determine what exactly I' should be removing to leave the correct foliage for wiring. There seems nice branch structure to work with but it's the big round pom poms, do I remove the growing centre to help flatten out and let light in?
I've loaded some photos, help really appreciated, would like to kick on and try wiring but don't want to chop off wildly on this tree.
