Can you harvest trees from the wild and make them bonsai? I noticed in all your videos you use nursery stock.

If you have permission from the land owner to collect, then yes.

Some term of collecting in the mountains is "Yamadori".
Google / youtube that for some idea's.

I do not know you or your horticultural/botanical knowledge but do bare in mind that there are appropriate and bad times to collect trees. If your knowledge is low I would wait to collect, it would be a shame to let good/old wild trees die.

Continuing that topic, would the size shown in the videos, 3-5 years old I think, be the best size to harvest or would something smaller be easier on the plant?

Collecting from wild is mainly done to get good old materials. If you want 3-5 years old materials its better to go to a nurcery or grow from seed.

But yes. Younger trees have smaller root systems and are easier to collect with less stress.
