I’m sorry if I’m so new at this that I bother anyone in this forum like I said I have just started out and I’m finding it difficult to find any information on growing bonsai. If I find a tree that I find appealing with a nice size trunk can I use that to begin my bonsai also if you cut the main branch that gives the tree length what will happen

If you cut a trunk, and you select a branch that will continue the trunk instead, thus creating taper you can then cover the cut with a paste (Or not, lots of debates are had over this) and the tree will, in many species, extend the bark over the cut areas. Compare these pictures, april 2016 and march 2017. (The areas you see in the 2016 iage are on the right in 2017 image)

This is one of the maples I bought and I defoliated in hopes it will grow smaller leaves I would like the trunk to be a bit thicker So I want to re pot it and let it grow for a couple years. However I would like this tree to stay this height

As Leatherback said your question is basically how do I grow a bonsai. There is no answer to that question.
Why did you defoliate? Why do you want to repot? Why do you want the tree to stay this height? As I said: start with the beginning: keep it alive. All the rest will follow in its time.

You want to grow a thicker trunk.

Now you have removed the motor for the growth. This years thickening Will be considerably less than if you didnt.

Well I am happy with the height of the tree it just needs to be a bit thicker on branches I assume that would come with years of growing and I defoliated because I read it would make the leaves come in smaller. As I said previously I could go and buy a mature tree but I need to know how to cut it and where to cut it so i do not kill it. It’s incredibly hard to find information on this so I came to a forum and have just been told that I need to research and I cannot if I can’t find the material to do so and if people are not willing to explain. I have access to many different trees at all sizes. I need a guideline to follow such as tree size cutting trunk chopping and so on please help and offer advice rather than telling me to wait years I understand this takes time but I’m sure someone can offer advice to start now

they sort of need to grow into big trunks, it takes time ... don't defoliate, for a while, just let the trunk grow

Yes the leaves might get smaller from defoliation. But it also weakens the tree. What you want in this stage is a strong and happy growing tree.

Here is your guideline:
First years focus on trunk and nebari.
Cut the top and regrow a few years.
If you want extreme taper, repeat above 2-3 times.
Next few years is about the branch placement. Grow on until you are happy with the placement and balance.
Now and later is Good time to put it in smaller pot.

Next few years is about ramification. After that, if you are happy with the ramification but leaves are still to big, defoliation could be considered.

As you can see you did the defoliation at least 10 years too early.

People are perfectly willing to explain. But showing up with seedlings that were dug up a month ago and showing a 50 year old bonsai asking "How do I go from what I have to what you see on the picture" is the same as showing someone a bucket of clay and asking how fo I make a castle.

You are basically asking how to grow bonsai from scratch which as I told you, is something that people study years to learn to do reasonably well. That is not something to explain in a forum post.

It takes decades to grow the type of trees you showed. Starting with the trunk and roots, which will take a decade to become reasonable if you want to grow the sort of plant you showed before. First step is to keep the plant alive and let it grow.
You can cut the main trunk and have it heal over, see above.
