Never build a castle, but I'm pretty sure it's easier than growing bonsai. Building a castle is straightforward: you draft your blueprints and just follow them step by step to obtain the desired outcome. I've never heard of anyone making blueprints on how to grow a bonsai. That's because the tree will not follow the blueprints. They grow little by little, year by year (maples actually grow quit a lot), and we do our best to train them to grow how in specific ways. Sometimes they do, most of the time they don't. I'll repeat the advice everyone else has already given. Let them grow. The secret is to spend a few minutes with them every day, checking the soil how wet it is and how much water you think they need, and, look at them grow. Let the trees teach you how they like to grow, and maybe then you can try to figure out how to convince the tree to grow in some specific way.

I found this playlist by Nigel Saunders really informative to guide you through the first couple of years.
Give it a watch and see if you can pick anything up from it yourself.

Thank you for the help with videos they help out a lot. As I said before I have access to many different size trees my friend gave me this yesterday because he heard I was looking to do bonsai I like the thickness of this maple tree

Anything is good to start with.
It will take at least 15 years to get to anything decent, and most of your attempts started at this time will die on the way.
Just get some plants that are easy to start with, try your best to keep them healthy and start studying.
You’ll need 3 or 4 years of experience with them before you should attempt anything bonsai...

Couldn’t I just purchase a tree that has the size trunk I need and then start from there rather than waiting for these little guys to get bigger? If so I understand that would also take time for the canopy to start growing

Yes, you can. Look at your locka garden center for trees with Good taper and still low growing branches.

It is not easy to select the material that has Most potential. But you Will learn more about bonsai looking for nurcery material than growing Maple twigs.

It’s not like you can’t ofc.
That’s exactly what you should do.

But The first thing you’ll need to get knowledge about is not bonsai. It’s horticulture, and will take some time.
Only after you have a good grasp on that should you start butchering your trees up.
You don’t start running marathons before learning how to walk.
